The beauty of Emmi’s dessert business lies in its unique combination of emotion, creativity and indulgence. An important part of this is our unique and versatile natural milk product, which ensures creaminess, texture, binding and lightness. In the premium dessert business, culinary art meets technical expertise – new recipes, surprising flavour combinations and appealing presentations make every product a masterpiece – from tiramisu and tres leches to mini-beignets, cheesecakes and lava cakes. Desserts always tell a beautiful history: crème brûlée is said to have been served at the court of Versailles and baklava at the Topkapi Palace in Istanbul. The variety of desserts is what makes this business so promising. When you buy desserts, you do so on an impulse – they appeal to the heart, not the shopping list.
Our aim: global market leader for premium desserts
Emmi is undergoing a strategic rethinking of dessert culture: the acquisition of the Mademoiselle Desserts Group in October 2024 brought the Emmi world of Desserts closer together. Our previous traditions from Italy and the US have been expanded with new inspirations from France, Great Britain, Belgium and the Netherlands.
With Mademoiselle Desserts, Emmi Dessert Italia, Pasticceria Quadrifoglio and Emmi Dessert USA under one roof, Emmi is diversifying its portfolio and expanding its consistently developed expertise in the field of desserts. Emmi is thereby assuming a leading role in the premium dessert category, which is growing worldwide.
How the journey into the world of desserts began
The sweet journey started more than 10 years ago with strategic acquisitions. The first was in Italy in 2011 with A27, Rachelli and Italian Fresh Foods – now Emmi Dessert Italia – known for traditional Italian premium desserts such as tiramisu. Pasticceria Quadrifoglio, with its frozen and chilled pastries, desserts, sorbets and ice creams, was added in 2019. In 2020, Indulge Desserts – now Emmi Desserts USA – added American and Latin American-inspired desserts to the US portfolio.
This was the springboard for the dessert business into the largest market in the world. The icing on the cake was the acquisition of the Mademoiselle Desserts Group in 2024. It holds a leading position in the European dessert market with 12 of its own production sites. The Group is characterised by a high-quality patisserie portfolio, a high degree of innovation and strong customer partnerships. Together with its customers, it further develops the product portfolio and serves both the food service sector and traditional retail channels, complementing Emmi’s existing portfolio, primarily in the in-store bakery sector – a kind of bakery within a supermarket or retail outlet.

Emmi’s dessert business is very international. To name a few examples: Mademoiselle Desserts’ famous mini-beignets can be found at your favourite Carrefour in France, at Coco di Mama in England or at the somewhat larger Whole Foods in America. At Pret a Manger in the UK you can try brownies, at Mercadona in Spain lava cakes (also called moelleux aux chocolat) and in almost every coffee shop in Italy our trendy muffins.
